A Summer Treat: Lychee & Guava Sorbet

Burn your Lychee & Guava Soy Candle ($44.95) while you cook! Fruity top notes of lychee, lime zest and mixed berries are accompanied by middle notes of peach and guava sorbet and base notes of coconut and vanilla.
Ingredients
1 cup caster sugar
½ cup water
2 x tinned lychees in syrup
1 x tinned half guavas in syrup
2 x punnets of fresh strawberries
2 tablespoons fresh lime juice
Recipe
Step 1: Mix the sugar and water in a saucepan over low heat and stir. Once the sugar is dissolved, increase the heat to high and boil for 1 minute until a sugar syrup is formed. Set aside to cool.
Step 2: Place the lychees, guavas and strawberries in a food processor and blend until smooth. Strain the puree through a sieve using a rubber spatula to push the mixture through.
Step 3: Add the sugar syrup and lime juice to the pureed fruit and stir to combine.
Step 4: Pour the mixture into a freezer-safe container such as a shallow metal cake tin. Every 30 minutes remove the mixture from the freezer and stir with a fork. Make sure to smooth and level out the sorbet after stirring. Repeat this process until mixture is complete frozen.
Step 5: Once firm, your sorbet is ready to serve with fresh fruit and/or mint leaves.
