Ingredients
For the cupcakes:
1 ½ cups plain flour
1 ½ tsp baking powder
½ cup unsalted butter, softened
¾ cup caster sugar
2 large eggs
2 tsp vanilla extract
½ cup milk
For the buttercream frosting:
1 cup unsalted butter, softened
3 cups icing sugar
2 tbsp milk
1 tsp vanilla bean paste
Optional: edible gold dust or sprinkles for a festive finish
Method
Preheat oven to 180°C and line a muffin tray with cupcake cases.
Cream butter and sugar until light and fluffy. Add eggs and vanilla.
Mix in dry ingredients alternately with milk until smooth.
Bake for 18-20 minutes. Cool completely before frosting.
Beat butter, icing sugar, milk, and vanilla until creamy. Pipe generously.
