Ingredients
For the Pavlova
- 4 large egg whites
- 1 cup caster sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 tablespoon cornflour
For the Topping
- 1 cup thickened cream
- 2 tablespoons icing sugar
- 2 ripe passionfruits, halved
- 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
Instructions
- Preheat the Oven: Preheat your oven to 120°C (250°F). Line a baking tray with baking paper and draw a 20cm (8-inch) circle.
- Whip the Egg Whites: Whisk egg whites until soft peaks form. Gradually add caster sugar, whisking until thick and glossy.
- Add Flavours: Fold in vanilla extract, vinegar, and cornflour until combined.
- Shape the Pavlova: Spoon the meringue onto the tray, shaping it into a disc with a slight dip in the centre.
- Bake: Bake for 1 hour. Turn off the oven and let it cool completely inside with the door ajar.
- Prepare the Topping: Whip the cream with icing sugar until soft peaks form.
- Assemble the Pavlova: Spread whipped cream over the pavlova. Top with passionfruit pulp and mixed berries.
- Serve: Slice and enjoy!
