Passionfruit & Lime Cake with Clean Kweens

Most people know it’s recommended to aim for two serves of fruit each day, but why is that?
Fruit is one of our major food groups, being high in nutrients, vitamins and minerals. These are important to boost our health and help to prevent chronic disease and illness. Even better, fruit makes for a very convenient and nutritious snack to have on the run or add to your meals; bananas even come in their own packaging, (winner)!
Often, we find people getting in a bit of a routine with fruit, once they find one or two favourites, they tend to put these on the grocery list every week. While some fruit is better, variety in our diet is very important! Breaking the routine and choosing fruits of different colours and shapes is a really great and easy way to ensure you’re getting a range of key nutrients, vitamins, minerals and phytochemicals to boost your health even more!
The new limited edition candle from Peppermint Grove, in divine Passionfruit & Lime, is delicious enough to eat, and inspired us to add passionfruit and lime to our next grocery list. We were taking our own advice of mixing up our fruit choice, with our guts, immune systems, skin and overall health thanking us for it later. Although we do love eating fruit fresh and whole, we also find it to be a delicious addition to baked goods! So what did we do, you ask? We used our fresh passionfruit and limes to whip up an amazing cake that is packed with wholefoods and will satisfy every sweet tooth! Bake it and pair it with a cup of coffee for morning tea with your girlfriends and trust us when we say you will not regret it. It’s moist and fresh, what more could you want? Happy baking!
Passionfruit & Lime Cake:
Ingredients – Cake:
- 1 cup plain flour
- 1 cup almond meal
- 1 tsp baking powder
- ½ cup sweetener/sugar
- 1 cup milk
- ¼ cup passionfruit yoghurt
- Juice of ½ lime
- 2 eggs
- ¼ cup olive oil
Ingredients – Syrup:
- 1 tbs sweetener/sugar
- 1 tbs water
- Juice of ½ lime
- ½ passionfruit
Method:
- Preheat the oven to 180 degrees Celsius.
- Combine all cake ingredients in a large mixing bowl.
- Line a loaf tin with baking paper.
- Pour the cake mix evenly into the tin & place in the oven.
- Bake for 35 minutes or until cooked through.
- Remove from the oven once golden.
- Add all syrup ingredients to a saucepan & stir over medium heat.
- Simmer for 1 minute until ingredients are combined.
- Pour over the cake & enjoy!
